The Herbalist in the Field: Discovering Plant Medicine in its Natural Habitat

Time: 10am – 1pm.
Fee: $45 per class CSV Members, $49.50 Non-Members
This in-the-field series will look at three healing herbs during each class, devoting a whole hour to each plant, including time spent identifying, harvesting, and processing it into remedies or food. This unique opportunity to really get to know common, useful medicinal plants takes advantage of the scenic gardens, fields, woodlands, and garden barn of the historic CanterburyShakerVillage. Be prepared to be outdoors. Classes will be held rain or shine with a combination of outdoor and indoor activities. The workshops include samples of each herb, remedies, and extensive notes. Participants are encouraged to create a herbarium and/or take photographs of the plants we meet. Take one workshop or take them all!

Summer solstice flips the switch on in the garden, with many of our culinary and floral herbs coming into peak. We will seek perfect flowers to create a flower essence and flower water. We’ll also dry herbs for tea and/or seasoning. We will key on on lemon balm for relaxation, roses for the heart and beauty, and calendula for nutrition and more. In August, the season begins the downswing of late summer. We’ll go out in search of St. John’s wort blossoms for a healing oil, goldenrod for an anti-allergy tincture, and fragrant culinary herbs for tea and/ or infused honey. Autumn Barks, Berries & Roots As the season shifts to autumn, most flowers and leaves have will past their peak, and the medicinal energies now reside in berries and the bark of shrubs and trees and the roots of wildflowers. We’ll venture out into the edges and forests of the Village to seek out pain- relieving birch bark for a tasty tea, elderberry to make an immune- boosting oxymel, and yellow dock for a nourishing iron-rich syrup.

Shaken, Not Stirred: Herb and Fruit Cordials

Festive cordials featuring seasonal produce like apples, pears, and cranberries are a delicious way to celebrate the holidays, both to serve at gatherings and give as gifts. Fruit and herbs combine beautifully in simple, delicious recipes with limitless possibilities. Maria will demonstrate the basics of cordial-making, and you’ll get enough ingredients to customize your own eight-ounce jar of cordial. Some, like sweet anise liquor and spiced pear cordial with maple syrup, will be ready in just a few days. Others will reach flavor perfection in time for holiday gift-giving, such as vanilla cordial syrup, cranberry-rosemary cordial, and spiced cider cordial.
All ingredients and materials will be included for your take-home cordial except the alcohol (due to liquor regulations), which you can easily add at home.
